Dixie Pineapple Beans

Baked beans with a twist - pineapple, pecans, warm spices and a crunchy topping. This would make a great potluck dish!
Ingredients:
1/4 cup light molasses
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 teaspoon salt
2 (16 ounce) cans vegetarian beans
1 (8 ounce) can pineapple chunks
2 tablespoons pineapple juice
1/2 teaspoon lemon juice
1/2 cup pecans, chopped
1 tablespoon light molasses
1 tablespoon butter, melted
Directions:
1. Combine 1/4 cup molasses, cinnamon, ginger, nutmeg and salt in a 1 1/2 quart casserole. Add beans, pineapple, pineapple juice, lemon juice and 1/4 cup of the pecans. Mix well. In cup, combine remaining pecans, 1 tablespoons molasses and butter). Spoon around edge of beans (optional). Bake at 350 degrees for 40-45 minutes or until beans are bubbly.
