A slice of this, some chopped onions ,and or chow chow with a bowl of beans, makes for a full belly.
Ingredients:
3 cups plain corn meal ( white or yellow)
2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp.salt
1/3 cup shortening ( melted )
2 cups buttermilk
3 eggs unbeaten
Directions:
1. Mix together corn meal, baking powder,soda and salt.
2. Add buttermilk , eggs, and melted hot shortening. In
3. large cast iron pan greased with shortening . Pour in mix . Pan should be pre heated in 425 degree oven. size of frying pan determends bread thickness. thinner the more crispy. Bake time 25 to 30 min. or until done in middle. Remove; turn pan upside down on plate or tray. If your pan has been seasoned and greased proper . The powane should drop out nice and easy. slice and serve
