Dirty Beans and Rice Stuffed Peppers

It's really just a bunch of leftovers stuffed inside a pepper, but my family raved about it!! Go vegetarian and leave out the meat, or use as a side dish.
Ingredients:
1 cup rancharo cheese (any cheese will do)
1/2 cup onion, diced
2 garlic cloves, diced
1 cup pinto beans (any kind of bean will do)
1 cup cooked rice
1 (8 ounce) can tomato sauce
1/2 lb ground beef (any leftover meat will do)
2 (2 ounce) bags fritos corn chips (any crunchy chip will do)
4 bell peppers (5 if small, any color)
Directions:
1. Sautee onion and garlic add beef and brown.
2. Mix together all ingredients except chips.
3. Stuff peppers and top with smashed chips.
4. Bake at 400 degrees for 30 minutes.
