From an old magazine clipping. Perfect for the holidays. A nice change from the usual green bean casserole.
Ingredients:
1 pound green beans (fresh or frozen)
2 tablespoons parsley, chopped
1 small onion, finely chopped (or to taste)
2 tablespoons butter or margarine
1 tablespoon all-purpose flour
1 tablespoon fresh dill, minced or 1 teaspoon dried dill weed
1 teaspoon granulated sugar
1 teaspoon cider vinegar
salt and ground black pepper to taste
1 cup sour cream.
Directions:
1. Cook green beans in boiling salted water just until tender crisp.
2. Drain beans, reserving 1/2 cup cooking water.
3. In large skillet, melt butter.
4. Saute onion and parsley until onion is softened.
5. Stir in flour to make a roux and cook until bubbly.
6. Slowly add reserved bean cooking water and cook over medium heat until sauce thickens.
7. Remove from heat and stir in remaining ingredients.
