Dijon Roasted Cauliflower

I don't like cauliflower. It's one of the few veggies I really just never developed a taste for. But, as I'm known to eat things I don't love, because I know they're good for me, and I like to stay culinarily open, I'm often trying to find new ways to appreciate the underappreciated to my palate. Read more . This quick and easy Dijon glaze did the trick!
Ingredients:
2lbs cauliflower, cleaned and separated
2 onions, roughly chopped
1/4 cup dijon mustard
1/4 cup olive oil or melted butter
1t fresh lemon juice
1t dried dill weed
1t hot sauce
1 clove garlic, minced
kosher or sea salt and fresh ground black pepper
1/4 cup fresh parmesan cheese, grated(optional)
Directions:
1. Combine mustard, oil or butter, lemon juice, dill, hot sauce and garlic in small bowl.
2. Whisk to combine well.
3. Put cauliflower and onions in roasting pan.
4. Toss with marinade and sprinkle with salt and pepper. See Photo
5. Roast at 425 for about half an hour, until tender, tossing once, while cooking.
6. Sprinkle with Parmesan cheese and return to oven for about 5 minutes.
