Dijon Potato And Mushroom Salad

A pretty potato salad that works for picnics or summer gatherings because it doesn't contain mayo.
Ingredients:
2lb potatoes(yukon gold, new, or red work best)
6 oz fresh mushrooms, sliced
2 stalks celery, sliced
1 large, or 2 small bell peppers, sliced
2 green onions, sliced
1/2 cup olive oil
juice from 1 large lemon
1-1 1/2 t dijon
2t dill, dried or about 1/4 cup fresh
dash(or 6) of hot sauce
sprinkling of sugar
salt and pepper
Directions:
1. Boil potatoes until tender, but still a bit firm. Cool completely.
2. Combine mushrooms, celery, peppers and onion in large bowl.
3. Whisk together oil, lemon juice, Dijon, dill, hot sauce sugar and salt and pepper.
4. Cube cooled potatoes and add to veggies.
5. Pour dressing over veggies and toss to coat.
6. Refrigerate a couple hours before serving to meld flavors.
