Dijon Pork Chops with Cabbage

Ingredients:
1 lb pork (chops-boneless center cut)
4 tsp dijon mustard
1 tsp safflower oil
1 tbsp safflower oil
1 tbsp grated fresh ginger
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/2 head red cabbage (about 1 pound), cored and shredded
2 granny smith apples, peeled & grated
1 tbsp pure maple syrup
1/4 tsp salt
2 tsp cider vinegar
1/2 cup toasted pumpkin seeds
Directions:
1. Brush both sides of the chops with mustard and set aside. In a large heavy skillet with a lid, warm 1 teaspoon of oil over medium-low heat. Add the ginger, cinnamon, and cloves. Cook, stirring for 10 to 15 seconds. Add the cabbage, apples, maple syrup and salt. Stir, reduce the heat to low, cover, and cook for about 30 minutes.
2. Meaawhile, in a heavy skillet heat remaining 1 tablespoon oil over medium-high heat. Arrange chops in a single layer. Cook, flipping halfway through, for about 9 minutes, or until a thermometer inserted in the center of a chop registers 155F.
3. Add the vinegar to the cabbage mixture. Increase the heat to medium. Cook for about 5 minutes, or until most of the liquid evaporates. Place each chop on a plate with a mound of the cabbage mixture. Sprinkle with 2 tbsp of the pumpkin seeds.
