Dijon Mushroom Potatoes

Ingredients:
1 medium white onion chopped
1 medium green bell pepper seeded and chopped
1 small carrot peeled and grated
1/2 pound fresh mushrooms sliced
1/2 cup beef stock
1 tablespoon soy sauce
1 tablespoon dijon mustard
1 tablespoon cornstarch
1 teaspoon freshly ground black pepper
4 baked potatoes
Directions:
1. In a large frying pan sauté vegetables in stock until most of the liquid is gone then mix remaining ingredients together in a bowl and add to the vegetables in the pan.
2. Mix well and cook stirring constantly over low heat for 1 minute then pour over hot split baked potatoes
