Dijon Beef and Spring Greens

Make a quick and easy main dish salad using deli roast beef and a package of fresh spring salad greens.  Drizzal with a  homemade Dijon dressing to add the perfect tangy  flavor.
Ingredients:
1/4 cup dijon mustard
1 1/2 tablespoons balsamic vinegar
1 garlic clove, minced
2 teaspoons sugar
1 (12-ounce) package spring greens or 6 cups fresh mesclun mix
9 ounces deli roast beef, diagonally sliced
1 small red bell pepper, seeded and cut into thin strips
2 ounces blue cheese, crumbled
1/2 cup alfalfa sprouts
Directions:
1. Combine first 4 ingredients in a small bowl; stir with a wire whisk.
2. Arrange greens evenly on 4 serving plates; top evenly with beef, red bell pepper strips, cheese, and sprouts.
3. Drizzle salads with mustard dressing.
