Dianne's Apple Bran Muffins

Breakfast Muffin, low cal, low fat, low carb
Ingredients:
1 1/2 c arrowhead mills whole grain flour
1 c wheat bran
2 tbsp splenda
1 1/4 tsp cinnamon
1 1/4 tsp baking soda
1/4 tsp salt
1 1/4 c fat free buttermilk
1/2 c egg beaters
3 tbsp canola oil
1 fuji apple, diced
1 1/2 tsp vanilla extract
Directions:
1. Heat oven to 350
2. Line a muffin tin with liners
3. Combine flour, bran, splenda, cinnamon, baking soda and salt in a large mixing bowl
4. Combine buttermilk, eggs, oil, chopped apple and vanilla in another bowl.
5. Make a well in the center of the dry ingredients and mix just to combine, do not overmix.
6. Divide batter evenly into muffin cups.
7. Bake for 20 minutes
8. Cool and serve
