Great for holiday brunch or anytime you need an appetizer. Hot sausage with pepperjack cheese baked in a biscuit crust.
Ingredients:
i lb. breakfast sausage (you can make this as hot as you like, hot sausage can used.)
2 cups monetery jack or pepper jack cheese
optional - chopped jalapeno pepper
1 can large flakey biscuits
Directions:
1. Brown crumbled sausage in a saucepan.If you are using a jalapeno add it now. If you are worried about the fat, put the sausage in a strainer and rinse with hot water to get excess fat off.
2. Put into a bowl and add the cheese of your choice, preferably pepperjack or monterry jack
3. Stir to melt chese into sausage.
4. When cool enough to handle, shape into small balls and set aside.
5. Tear the biscuits apart to make two.
6. Stretch biscuit and place sausage ball on it, then pinch edges of biscuit so that sausage is covered completely.
7. Place on parchment or spray baking sheet with cooking spray.
8. Bake according to biscuit directions, usually about 25 minutes.
9. These are so good - you will wish you had made a double batch. They can be served with sour cream mixed with taco seasoning to cool off the heat, just mix it up before baking the rolls so the flavors can blend.
