Diabetic Strawberry Jam

Ingredients:
1 1/2 teaspoons unflavored gelatin
2 tablespoons cold water
1 (20 ounce) package frozen unsweetened strawberries, thawed plus juice
8 teaspoons artificial sweetener
Directions:
1. Soften gelatin in cold water.
2. In a heavy saucepan bring strawberries and juice to a boil.
3. Reduce heat and simmer until soft.
4. Add softened gelatin and stir til completely dissolved.
5. Cool.
6. Stir in artificial sweetener.
7. Chill before serving.
