Diabetic Eggnog

Eggnog for Diabetics
Ingredients:
2 eggs, beaten
1/4 cup splenda sugar substitute
1 (13 ounce) can evaporated milk
2 cups 2% low-fat milk
1 teaspoon vanilla
1 teaspoon rum flavoring
ground nutmeg
2 cups 2% low-fat milk
Directions:
1. Mix 2 cups 2% milk with Splenda in pan.
2. Boil for 1 minute,stirring constantly.
3. Remove from heat.
4. Mix 1/2 of the milk with the eggs,and add back to the pan.
5. Cook over low heat,stirring constantly,until slightly thickened.
6. Remove from heat.
7. Stir in Vanilla and Rum flavorings.
8. Cool to room Temperature,then refrigerate til chilled.
9. Stir 2 cups 2% milk into chilled mixture.
10. Sprinkle with nutmeg.
11. Serve in 4 oz. glasses.
