A cake that with the right ingredients will turn out red. Delicious way to experiment with chemistry. The frosting is called Ermine Frosting, Butter Roux, or boiled milk frosting and is the only way to top this red cake.
Ingredients:
2 1/2 c cake flour
1/2 c cocoa (not dutch process)
1 ts baking soda
1/2 ts baking powder
1/2 ts salt
3/4 c butter
1 2/3 c sugar
3 eggs
1 1/2 ts vanilla extract
1 1/2 c water
Directions:
1. Preheat oven to 350°F.
2. Coast two 9-inch layer cake pans with nonstick cooking spray
3. Sift flour, cocoa, baking soda, baking powder and salt together and set aside.
4. Beat butter, sugar and eggs in large electric mixer bowl at high speed 3 minutes or until fluffy-light.
5. Combine water and vanilla.
6. With your mixer at low speed, add sifted dry ingredients alternately with water mixture, beginning and ending with dry ingredient; scrape bowl often and beat after each addition only enough to combine.
7. DO NOT OVER-MIX.
8. Divide batter between pans, smoothing tops, and bake 30 to 35 minutes, until a cake tester inserted in center of layers comes out clean and cakes are springy to touch.
9. Cool layers in pans on wire racks, then turn out on racks.
