This oven-fried chicken recipe honors the movie Desk Set where Katharine Hepburn plays a corporate reference librarian and Spencer Tracy an efficiency expert.  While falling in love, they discuss fried chicken recipes. In one scene, Tracy even cooks the dish for Hepburn.
Ingredients:
1/4 cup dry breadcrumbs
1 tablespoon grated parmesan cheese
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon garlic salt
1/4 teaspoon ground red pepper
1/3 cup low-fat buttermilk
4 (6-ounce) skinned chicken breast halves
cooking spray
1 tablespoon stick margarine or butter, melted
Directions:
1. Preheat oven to 400°.
2. Combine first 6 ingredients in a shallow dish. Place buttermilk in a shallow dish. Dip chicken in buttermilk; dredge in breadcrumb mixture. Place chicken, breast sides up, in a jelly-roll pan coated with cooking spray. Drizzle margarine over chicken. Bake at 400° for 40 minutes or until done.
