I have not tried these cookies. I'm posting this for safe keeping. I found this recipe in Bake The Best Ever Cookies kids cookbook.
Ingredients:
1 cup all-purpose flour, plus 1/4 cup (250ml & 50 ml)
3/4 cup rolled oats (175 ml)
1/2 cup packed light brown sugar (125 ml)
1/2 teaspoon baking soda (2 ml)
1/2 cup butter or 1/2 cup margarine, melted
12 ounces caramel topping (340 ml)
1 cup chocolate chips (250 ml)
1 cup pecans, coarsely chopped (250 ml)
Directions:
1. Preheat the oven to 350.
2. In a large bowl, beat together 1 cup (250 ML) of the flour (save the rest for step 4) with the oats, brown sugar, baking soda, and the melted butter.
3. Press this mixture into the bottom of the baking pan. Bake for about 10 minutes. (Set a timer so you don't forget)!
4. While the dough is baking, throughly mix the caramel and the remaining 1/4 cup (50 ML) of flour in a medium sized bowl. (Coat your spoon and a plastic spatula with a bit of margarine, because this can be sticky and a little difficult).
5. Remove the pan from the oven-careful, the pan is hot! - and sprinkle a layer of chocolate chips on top of the dough. Then, add a layer of the chopped pecans. Lastly, drizzle the caramel mixture on top and bake 20-25 minutes, until brown.
6. Allow these cookies to cool in the pan on a wire rack, before cutting them.
