Deluxe Tuna Salad

Quality fresh ingredients make this tuna salad extraordinary.
Ingredients:
14 oz solid white albacore tuna
3 tbsp celery, raw
8 large pitted black olives
7 stalk fresh green onions
1 medium tomato
1 tbsp sweet relish
1 tbsp traditional pub style mustard
3 tbsp light mayonaisse
1/4 cup parsley, raw fresh
Directions:
1. Drain two cans of tuna well. Small dice the celery, I usually leave in a few leaves. Slice the onions. Seed and chop the tomato. Macerate the parsley.
2. In a separate bowl mix the mustard, mayonnaise, and parsley. When well stirred pour over tuna and veggies toss and let chill for at least 2 hours. Server over fresh greens.
