I found this recipe in a garden club cookbook many years ago. I always serve these at Fourth of July picnics and at church suppers.—Martha Stine, Johnstown, Pennsylvania
Ingredients:
1 cup butter, cubed
4 ounces unsweetened chocolate, coarsely chopped
2 cups sugar
4 eggs
2 teaspoons vanilla extract
1-1/2 cups king arthur unbleached all-purpose flour
1-1/2 teaspoons baking powder
1 cup chopped walnuts or pecans
topping:
1/2 cup butter, cubed
4 ounces unsweetened chocolate, coarsely chopped
1 cup sugar
1 can (5 ounces) evaporated milk
3-3/4 cups confectioners' sugar
3 teaspoons vanilla extract
4 cups miniature marshmallows
Directions:
1. In a microwave, melt butter and chocolate; stir until smooth. Cool. In a large bowl, combine the sugar, eggs, vanilla and melted chocolate. Combine flour and baking powder; add to chocolate mixture and beat just until blended. Fold in nuts.
2. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 325° for 25-30 minutes or until a toothpick inserted near the center comes out clean.
3. Meanwhile, in a large heavy saucepan, melt butter and chocolate. Stir in sugar and milk. Cook over low heat for 20 minutes, stirring frequently. Gradually whisk in confectioners' sugar until smooth. Remove from the heat; stir in vanilla.
4. Place marshmallows over warm brownies; pour warm topping over marshmallows. Cool on a wire rack for at least 2 hours before cutting. Yield: about 3 dozen.
