This has become my absolute favorite breakfast served with some rich greek yogurt and it becomes a decadent meal with lots of healthy fats and protein and fiber. I repeatedly made it but could never get them to stick together enough for bars so I eat it as my granola. Adding 1 cup of coconut is a great addition too. Also, make sure you are using raw and unsalted nuts and seeds in this recipe. It keeps the nutrition of the seeds intact.
Ingredients:
2 cups old fashioned oats
1 cup sliced almonds
1/4 cup sunflower seeds
1/3 cup pumpkin seeds
1 teaspoon cinnamon
3 tablespoons salted butter
1/4 cup brown sugar
1/2 cup raw honey
1 teaspoon vanilla
Directions:
1. Preheat oven to oven to 350.
2. Mix the butter, sugar, honey and vanilla in a pan and set to low so it will all simmer together.
3. While the liquids are simmering, mis all the dry ingredients together, the oats, almonds, sunflower seeds, pumpkin seeds, and cinnamon.
4. When the sugar liquid has gotten hot and bubbly, pour into the bowl with the dry ingredients and mix it all together.
5. Place parchment paper in a 13x9 pyrex dish and pour the granola mix inches Spread it around evenly and bake for 20 to 25 minutes.
6. ****The parchment paper is key. I ruined three batches trying to avoid using it, but the mix is just too sticky without it and will stick horrifically to the pan no matter how much you grease or oil it. Please learn from my mistake! lol.
