Deliciously Moist Blueberry Bran Muffins

The bran muffin recipe to end all bran muffin recipes! (just kidding...) You can fill them with whatever you like-I put blueberries on here, but I've used blueberries & pomegranate seeds. That was tasty.
Ingredients:
1 1/2 cups wheat bran
1 cup lowfat buttermilk
1/3 cup applesauce, unsweetened
1 tbsp canola oil
1 egg
1/3 cup honey
1/2 teaspoon vanilla extract
1 cup whole-wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup blueberries
Directions:
1. Preheat oven to 375 degrees.
2. Grease muffin cups or line with paper muffin liners.
3. Mix together wheat bran and buttermilk; let stand for 10 minutes.
4. Beat together oil, applesauce, egg, honey and vanilla and add to buttermilk/bran mixture.
5. Sift together flour, baking soda, baking powder, cinnamon, and salt.
6. Stir flour mixture into buttermilk mixture, until just blended.
7. Fold in berries and spoon batter into prepared muffin tins.
8. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
9. Cool and enjoy!
