Delicious Pina Colada Cake

Easy to make. A great birthday cake.
Ingredients:
1 (18 ounce) pkge. white cake mix
1 (3 ounce) instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
4 eggs
1/2 cup water
1 tablespoon rum extract, plus water to make 1/3 cup
1/4 cup oil
1 cup flaked coconut (optional)

1 (8 ounce) can crushed pineapple in juice
1 1/2 teaspoons rum extract, plus
water, to make 1/4 cup
1 (3 ounce) pkge. instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
1 (8 ounce) container frozen whipped topping
1 cup flaked coconut
Directions:
1. Blend all ingredients except coconut.
2. Beat 4 minutes at medium speed.
3. Stir in coconut.
4. Pour into 2 greased and floured 9 inch layer cake pans.
5. Bake at 350 degrees for 25-30 minutes.
6. Frosting.
7. Combine all ingredients except whipped topping and coconut; beat until blended.
8. Fold in whipped cream.
9. Frost. Sprinkle with coconut. Chill.
