Ingredients:

  • 1 (18 oz) pkge. white cake mix
  • 1 (3 oz) instant coconut cream pudding mix or 1 (3 oz) instant vanilla pudding or 1 (3 oz) cheesecake flavor instant pudding and pie filling
  • 4 eggs
  • 1/2 cup water
  • 1 tbsp rum extract, plus water to make 1/3 cup
  • 1/4 cup oil
  • 1 cup flaked coconut (optional)
  • 1 1/2 tsp rum extract, plus
  • 1 (3 oz) pkge. instant coconut cream pudding mix or 1 (3 oz) instant vanilla pudding or 1 (3 oz) cheesecake flavor instant pudding and pie filling
  • 1 (8 oz) container frozen whipped topping

Directions:

  1. Blend all ingredients except coconut.
  2. Beat 4 minutes at medium speed.
  3. Stir in coconut.
  4. Pour into 2 greased and floured 9 inch layer cake pans.
  5. Bake at 350 degrees for 25-30 minutes.
  6. Frosting.
  7. Combine all ingredients except whipped topping and coconut; beat until blended.
  8. Fold in whipped cream.
  9. Frost. Sprinkle with coconut. Chill.
