Because I couldn't find a peach cobbler that excited us, I created this recipe . It's easy and oh...so good! It's a favorite with our family. If you like a burst of pleasant flavors, this is the recipe for you! I hope it becomes a favorite with yours too. If you don't have cardamon in your cupboard just use nutmeg or all spice. Note: Disregard the word Celius in step 5 of the directions. I wrote c. and that is what showed up. I couldn't edit it out. It is supposed to read cup.
Ingredients:
1/2 cup unsalted butter, minus 1 tbsp
1 cup flour
1 1/3 cups sugar, divided
2 1/2 teaspoons baking powder
1 pinch salt
2 teaspoons cornstarch
3/4 cup milk
4 cups fresh peaches, peeled and sliced
1/4 cup peach juice, cooked
1 tablespoon lemon juice
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
1/4 cup brown sugar
Directions:
1. Preheat oven to 375.
2. Melt butter in a 13 x 9 baking dish. Set aside.
3. In a medium saucepan, bring the peach slices, 2/3c. sugar, and lemon juice to a boil over high heat, stirring constantly. When boiled, stir in the cinnamon and cardamon.
4. Set aside cooked peach mixture, but reserve 1/4 cup of the peach juice to add to the batter.
5. Combine flour, 2/3 Celsius sugar, baking powder, and salt in a medium bowl. Whisk to blend together. Now, add the milk, vanilla, and the peach juice; stirring to blend the batter together.
6. Pour batter over melted butter. Spoon cooked peach mixture over batter.
7. Bake 375 degrees 40-45 minutes. Remember ovens vary.
8. When done, remove from oven. Sprinkle brown sugar over the top. Cover with foil. Allow time for the brown sugar to melt. This will give you another layer of flavor!
9. Enjoy!
