Delicious Nutritious Banana Bread

This is a healthier version of our favorite banana bread recipe. It has very little fat yet still moist and light. The maple syrup also adds a nice depth of flavor. I use white whole wheat which is lighter, milder and less dense than regular whole wheat and would recommend it for this recipe. King Arthur Flour carries it.
Ingredients:
1/4 cup honey
1/4 cup real maple syrup
2 teaspoons vanilla
2 eggs
3 bananas, mashed
1/4 cup milk
2 1/2 cups whole wheat flour
1/4 cup ground flax seeds
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
Directions:
1. Pre-heat oven to 350°F.
2. Stir together all the wet ingredients (first 6) in a large bowl.
3. In a smaller bowl stir together the dry ingredients.
4. Add dry ingredients to the wet and mix until basically smooth.
5. Pour batter into a well greased loaf pan and place into the oven to bake for 50-60 min or until tooth pick comes out fairly clean.
