Delicious Homemade Macaroni & Cheese

Ingredients:

  • 1 (16 oz) box noodles (my favorite are shell )
  • 1 (12 oz) package sharp cheddar cheese
  • 1 (8 oz) package mild cheddar cheese
  • 1 egg
  • 1 (12 oz) can evaporated milk

Directions:

  1. Pre-heat the oven to broil.
  2. Cook the noodles, as directed.
  3. Cube about 3/4 of the block of sharp cheddar cheese, and 3/4 of the block of mild cheddar cheese.
  4. Cut the remaining 1/4 of the blocks of cheese into slices, set aside.
  5. In a large sauce pan, heat the egg and begin melting the cubed cheese.
  6. Stir constantly!
  7. Slowly add the cubed cheese and evaporated milk, until all the cubed cheese is melted and desired consistency is reached. (I usually don't use the whole can of milk, but if you like it creamier, feel free!).
  8. Mix cooked noodles into the sauce pan with the melted cheese sauce.
  9. Pour into a 9 x 13 casserole dish.
  10. Cover the dish with the remaining sliced cheese.
  11. Broil for about 5-7 minutes, or until the cheese on top is melted, bubbly & brownish.
  12. I give it a good stir before serving, so all the cheese is mixed together.
