Delicious Easy to Make Quinoa!

I read this recipe in a cookbook, but when I decided to make it, I put my own twist on it. It turned out delicious! It is a simple elegant dish to make, and everyone will enjoy! You can add in any other vegetables you have on hand *Original recipe is in Hip Kosher *
Ingredients:
1 cup quinoa
1 raw red bell pepper, chopped
1 cup corn kernel (any kind- from a can, frozen...)
3 -4 scallions, chopped
3 tablespoons minced fresh flat leaf parsley
6 tablespoons extra virgin olive oil
3 tablespoons lime juice
salt and pepper
Directions:
1. Prepare quinoa according to directions on package (Usually 2 cups of water with the 1 cup of quinoa, quinoa is ready when it has absorbed all the water.
2. In a separate bowl, combine the olive oil, lime juice, and salt and pepper (to taste) mix
3. Put the quinoa in a bowl and fluff, then add the dressing (olive oil and lime).
4. Add in the chopped vegetables and mix around.
5. Enjoy!
