This recipe belongs to Anna Olson, a very famous Canadian chef. I reduced the original amount of sugar and oil just to make them it a little lighter. It works really well for muffins, too. I do not recommend the use of baking paper cups, because the muffins will stick to them.
Ingredients:
320 g pitted dates
1 cup orange juice
1 1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cloves
1 large egg
1/4 cup vegetable oil (i use extra light olive oil)
3/4 cup raisins
Directions:
1. Simmer chopped dates and orange juice for less than a minute. Remove from heat a let cool down.
2. In a separate bowl, mix flour, sugar, baking soda, baking powder, salt and cloves and set aside. In another bowl, whisk egg and oil.
3. Add egg mixture and dates to flour mixture and mix until blended. It is very important do not over mix this batter; stir in raisins. Pour batter into greased loaf pan or muffin tin and bake for approximately 45 mins or until tooth pick comes out clean.
