I have tried cooking this when my family and I decided to cut off our calorie intake at home. This recipe turned out so delicious that it has been part of our family dinner every now and then. It is simple, healthy and tasty! This recipe can also be cooked in a slow cooker. Just saute garlic, onion and ginger first in a frying pan. Milk can be added before serving.
Ingredients:
1 lb chicken breast, skinned and chopped
2 garlic cloves, pound
1 onion, cubed
1/8 ginger, sliced
2 potatoes, cubed
1 carrot, cubed
1 bell pepper, sliced
1 teaspoon curry powder (i made mine 2 for a more stronger taste)
1 chicken bouillon (optional)
1 cup water
1/2 cup low-fat milk
salt and pepper
1 tablespoon olive oil
Directions:
1. 1. Heat the pan.
2. 2. Put oil, saute garlic, onion and ginger
3. 3. In the same pan, stir fry the chicken cube until pink is gone.
4. 4. Add curry powder.
5. 5. Put water and let boil. Add chicken bullion (if using).
6. 6. Cover and simmer until chicken is tender.
7. 7. Add potatoes and carrots til cooked.
8. 8. Adjust taste with salt and pepper.
9. 9. Add milk, don't let it boil.
10. 10. Then add bell pepper and turn the heat.
