Low fat!
Ingredients:
3/4 cup plain flour
3/4 cup self-raising flour
1/4 cup desiccated coconut
1/4 cup wheat germ
1/4 cup sultana
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 cup nonfat milk
2 eggs
1 mashed banana
1/4 cup low-fat yogurt
1 tablespoon vanilla extract
1/4 cup applesauce
Directions:
1. Prehat oven to 350F or 180°C.
2. Mix all dry ingredients in a large bowl.
3. Mix all wet ingredients, except bananas.
4. Add the wet mix to dry.
5. Fold in the banana.
6. Pour into a suitable-sized, greased mould [square is best].
7. Put mix in oven for 50-60 minutes, checking every 20 or so.
8. When finished, serve and enjoy!
