This soup has a Smokey flavor from the bacon and fire roasted peppers. It is comforting as well as a pallet satisfier.
Ingredients:
1 delicata squash pealed, seeds removed and cubed in to half inch pieces.
1 medium eggplant cut into half inch pieces
2 anaheim peppers roasted and skins removed.
1 celery stock trimmed and chopped .
1 tablespoon of green peppercorns
2 strips of apple wood bacon.
4 cups of mushroom stock.
1/2 teaspoon of turmeric.
Directions:
1. Place the bacon in a small pot cook until fat is rendered. 2. Add the Eggplant and the squash and celery 3. PEPPERS: 4. In the mean time, rub the Anaheim peppers with olive oil and place in a small pan. 5. Roast under a broiler until charred. 6. Place peppers in a plastic bag and seal for ten minutes. 7. Remove peppers and peal off charred skin. 8. Slice peppers into 1/2 inch pieces and add to pot. 9. Add a 1/2 cup of your favorite soup pasta and cook until aldente 10. Serve immediately with crusty bread. 11. Enjoy!
