Southern Goodness...I Think I Drooled While I Was Typing This Recipe. Hope This Pic Helps... Ingredients:
2 - 4 yellow squash |
vegetable or canola oil for frying |
cracker crumbs (sleeve of saltine crackers crushed or low sodium ritz works well) or cracker meal that you use for frying fish |
2 eggs |
1 - 2 tablespoons milk |
Directions:
1. Slice the squash to about 1/4″ thick. 2. Whisk the 2 eggs and the milk together. 3. Dip the squash slices in the egg mixture,then in the cracker crumbs. 4. While you’re dipping the squash,heat the oil in a skillet over medium heat. 5. Place the squash in the heated oil in a single layer. 6. Cook the squash for about 2-4 minutes on each side, or until they turn a golden brown. 7. Let them drain on a paper towel, and serve them warm. |
