2. pound fresh pumpkin, peeled and seeded
3. Peanut oil
4. Salt (optional)
5. Preparation
6. Cut pumpkin into very thin slices with a vegetable peeler.
7. Pour oil to a depth of 4 inches into a Dutch oven; heat to 375°. Fry pumpkin slices, in batches, about 3 minutes or until crisp. Drain; sprinkle with salt, if desired.
