A lovely smooth addictive treat
Ingredients:
1 onion, sliced
1 lb chicken liver
4 sprigs parsley
1 cup butter, at room temperature
1 tablespoon cognac, very generous
1/2 teaspoon nutmeg
1/2 teaspoon clove
1/2 teaspoon salt
2 teaspoons tarragon
1/2 cup heavy cream, whipped
1 cup chicken stock
Directions:
1. Combine onion, livers, parsley and stock.
2. Bring to a boil.
3. Simmer covered for 20 minutes.
4. Drain.
5. To a food processor add liver, herbs and spices.
6. Process.
7. Add butter.
8. Process until smooth.
9. Refrigerate for 15 minutes.
10. Fold cream into liver mixture.
11. Pour into small terrines.
12. Wrap well.
