Decadent Lil Chocolate Cheese Cakes

These are one of those great recipes that go into your Heirloom Recipe book . A much talked about favorite.... They really are Heaven sent
Ingredients:
lil cakes
6 cups white flour
4 cups sugar
1 cup cocoa
1 tbsp salt
4 tsp baking soda
4 tsp vinegar
1 1/3 cup grapeseed oil
4 tsp vanilla
2 1/2 cups buttermilk
1 1/2 cups water
topping
3 cups cream cheese
2/3 cup sugar
1 cup chocolate chips
2 eggs
warm water as needed
1/2 cup sliced almonds
cream topping
3 1/2 cups whipped cream ( or cool whip topping)
1/4-1/2 cup chocolate syrup
grated chocolate
Directions:
1. Preheat oven 350*
2. Using large muffin cups or custard cups butter or line with muffin liners
3. Add first 4 ingredients of Lil Cakes batter in mixer gently mix till all is combined
4. Make a small trough into the flour mixture add Baking Soda to it
5. Pour vinegar directly on the soda and allow to stand 2 minutes to get a really good reaction. If it does not foam up the soda is old and you have to begin again
6. Now with mixer running slowely add the oil, vanilla, buttermilk, and the water last.
7. Scrape down the sides of the bowl halfway through the addition of the liquid. Pour batter into a container with spout and prepare the topping.
8. Topping:
9. Whip together the cream cheese, eggs and sugar on medium add chocolate chips and just a little warn water to loosen it up but be very cautious because it can become too runny if you add too much
10. Set aside.
11. Pour batter into dishes or muffin cups filling halfway.
12. Place a dollop of cream cheese mixture on top of batter
13. Pour more batter over top of cheese mixture filled to the 3/4 mark now in cups
14. Top with more cream cheese spreading over top to edges completely covering the batter.
15. Push a few sliced almonds down into cheese topping
16. Bake 15 minutes in preheated oven rotate containers and bake another 15 minutes until done toothpick will come out clean when done. Cool Completely
17. Whip Cream or if using coolwhip add enough chocolate syrup to give a nice chocolate flavor
18. Add a generous dollop of chocolate cream on top of cakes when serving and sprinkle cream with a few more sliced almonds and grated chocolate
