Decadent decadent decadent. This is probably the best carrot cake I have ever tasted and i have tasted many. The pineapple adds so much moisture to this cake it is unbelievable. With the pineapple juice and orange zest in the frosting it makes the cream cheese frosting that much better.
Ingredients:
butter and flour for pan
1-1/2 cup all purpose flour
1/4 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup vegetable oil
6 tablespoon sugar
2 eggs
1/4 cup pineapple juice concentrate
1 teaspoon vanilla extract
1 cup shredded carrots
1/2 cup golden raisins
1/2 cup crushed pineapple drained
pineapple cream cheese frosting
8 ounces cream cheese at room temperature
5 tablespoons pineapple juice concentrate
1/2 teaspoon vanilla extract
1/2 teaspoon finely grated orange zest
Directions:
1. Preheat oven to 350. Grease and flour a loaf pan. In bowl toss flours, baking powder, baking soda, cinnamon, ginger and salt. In a second bowl stir oil, sugar, eggs, pineapple juice and vanilla. Stir liquid into dry ingredients until smooth. Stir in carrots, raisins and pineapple then pour into prepared ban and bake for 40 minutes. Cook in pan on rack for 1 hour. Unmold cake and ice with cream cheese frosting. To make icing coming all ingredients together until smooth.
