I make this dish in early summer and spring especially. I love the flavors of bacon, squash and cheese. This is a great family dish to serve with any meat. My family loves this dish.
Ingredients:
4 cups cooked yellow squash, mashed
1 stick butter
1 large onion, sliced
4 cloves garlic, minced
6 slices of hickory smoked bacon,cooked crisp and crumbled(i use wrights)
1 cup sliced green onions
1/2 cup heavy cream
1 can cream of mushroom soup
1 cup sour cream
salt and pepper to taste
1 cup crushed ritz crackers
8 oz. sharp cheddar cheese, shredded
Directions:
1. Preheat oven to 350
2. Saute onions and garlic in butter until tender.
3. Place squash, sour cream, green onions, soup and cream in a large bowl.
4. Mix well and season with salt and pepper.
5. Spoon squash into buttered baking dish or casserole dish.
6. Top with onion mixture.
7. Sprinkle with bacon and cheese.
8. Top with cracker crumbs.
9. Bake at 350 degrees for 15 to 20 minutes or until nicely browned.
