Day-After-Thanksgiving Turkey Stir-Fry

I work for a priest, Fr. Leo, who loves to cook and shared this recipe with me. Perfect for the day after Thanksgiving, the dish encompasses the holiday spirit, while adding a twist.
Ingredients:
1 cup cut fresh green beans
1 small red onion, chopped
1 tablespoon peanut or canola oil
1 garlic clove, minced
2 tablespoons whole-berry cranberry sauce
1 tablespoon soy sauce
1 teaspoon white vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups cubed cooked turkey breast
2 tablespoons chopped cashews
1 tablespoon minced fresh cilantro
hot cooked rice
Directions:
1. In a large skillet, saute beans and onion in oil until tender. Add garlic; cook 1 minute longer.
2. Meanwhile, in a small bowl, combine the cranberry sauce, soy sauce, vinegar, salt and pepper; pour over bean mixture. Add turkey; simmer, uncovered, for 4-6 minutes or until heated through. Sprinkle with cashews and cilantro. Serve with rice. Yield: 2 servings.
