This recipe was just something my friend made up for a get together. 4 out of 5 kids LOVED it!!! I made it at home it was a hit again! I used ground turkey in my dish, as we don't buy beef, but the original was made with beef. I imagine Soy crumbles will be just as yummy! You can use any pasta you have on hand. The pepperoni and cheese is really added bonuses so you can use as little or as much as you like.
Ingredients:
1 lb ground turkey or 1 lb beef
12 ounces elbow macaroni
24 ounces spaghetti sauce
12 ounces sliced mushrooms
16 ounces black olives, whole
2 teaspoons garlic powder
2 teaspoons dehydrated onion
8 ounces cottage cheese
20 pepperoni slices
3/4 cup reduced-fat monterey jack and cheddar cheese blend
Directions:
1. Preheat oven to 350.
2. 1. Brown turkey in pan.
3. 2. While turkey is cooking boil pasta.
4. 3. Drain turkey, put it back in pan.
5. 4. add spaghetti sauce, mushrooms, olives, spices, cottage cheese and pasta to meat - stir well.
6. 5. Spray 9x13 baking pan with cooking spray; Add mixture to dish.
7. 6. Place pepperoni on top of mixture; Then sprinkle cheese on top.
8. 7. Bake 30 mins at 350degrees.
