This recipe is made with dried beans soaked in water for several hours. They are so so much better than any canned you can buy. I hope you love this simple recipe.
Ingredients:
3 cups dried lima beans
2 cups chicken stock
1 teaspoon bacon drippings
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions:
1. Sort through the beans thoroughly to make sure there are no stones or bad beans. Wash real well with water,discard washing water and put into pot with fresh water,enough to barely cover the beans. Cover and let set for at least 3 hours and not longer than 8 hours. You can skip this step, but the beans take much longer to cook, and the broth is not as rich and thick.
2. Once the beans are ready to cook, don't discard the water, add chicken stock, bacon drippings, salt and pepper and bring to a boil.
3. Once the beans start boiling, turn the heat down to a simmer and cook approximately 1 to 2 hours or until tender.
