This is my grandmother's date square recipe. A healthy snack. Great recipe for anyone with a sweet tooth.
Ingredients:
filling
1 1/2 cup (375 ml) chopped, seeded dates
1 (250 ml) cup water
1/2 (125 ml) cup white sugar
crumb mixture
1/2 tsp (2 ml) baking soda
1 cup (250 ml) brown sugar
1 1/2 cups (375 ml) white flour
1 3/4 cups (425 ml) rolled oats
3/4 cup (175 ml) softened butter or margarine
1 tsp (5 ml) vanilla extract or pure vanilla
Directions:
1. Combine the filling ingredients and simmer on low to medium heat until the dates are softened about 8 to 10 minutes. Let cool.
2. Combine the crumb mixture ingredients together mixing with your hands or with an electric mixer until the butter is well combined..
3. Spread half the crumb mixture in a greased 9 X 9 baking pan. Spread all the filling on top.
4. Spread the other half of crumb mixture on top of filling.
5. Bake in a 350 degrees oven for 35 to 40 minutes.
6. Let cool and cut into squares.
