The date fruit is one of the oldest cultivated tree crops, and has been grown for thousands of years. Eating California dates can help you achieve the recommended goal for fruit servings each day. This sweet taste treat is from the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Ingredients:
1 cup graham cracker crumbs, finely crushed
1 teaspoon baking powder
1/2 teaspoon salt
3 egg whites, beaten to stiff peaks
1 cup sugar
1/2 cup dates, chopped
1/2 cup walnuts, chopped
1 teaspoon vanilla extract
whipped cream, lightly sweetened (for garnish)
Directions:
1. Preheat oven to 350F and grease a pie plate very well.
2. Combine cracker crumbs, baking powder and salt.
3. Add sugar gradually to stiffly beaten egg whites, continuing to beat.
4. Fold in the cracker mixture and add dates, nuts and vanilla.
5. Pour mixture into prepared pie plate and bake for 25 minutes.
6. Cool.
7. Cover with whipped cream and serve.
