This is my mom's recipe. I loved this sliced with cream cheese spread on top.
Ingredients:
1 cup chopped dates
3/4 cup chopped walnuts
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/4 cup shortening
3/4 cup boiling coffee
2 eggs
1/2 teaspoon vanilla extract
1 cup sugar
1 1/2 cups flour
Directions:
1. Preheat oven to 350 degrees.
2. Combine nuts, flour, soda, and salt.
3. Add shortening, coffee and dates.
4. Stir to blend.
5. Beat eggs slightly and add vanilla.
6. Stir in sugar.
7. Add date mixture.
8. Be sure not to overmix.
9. Bake in greased loaf pan for one hour.
10. Serve topped with cream cheese for an even better treat!
