Another classic bar cookie. Dust them or better yet shake them up in a plastic bag with confectioner sugar to coat.
Ingredients:
12 tablespoons butter
1 1/4 cups sugar
2 teaspoons vanilla extract
4 eggs
1 pinch salt
1 1/4 cups flour
2 cups chopped dates
2 cups chopped walnuts
Directions:
1. Preheat oven to 350.
2. Spray a 12 x 16 inche cookie sheet with nonstick spray. You'll need a cookie sheet with sides or a jelly roll pan. Set aside.
3. With an electric mixer, cream the butter and sugar. Add vanilla and eggs. Mix until well blended. On low speed, add salt, flour, dates and walnuts. Mix until just blended.
4. Spread dough in prepared cookie sheet and with spatula, spread the dough evenly.
5. Bake for 25-30 minutes or until top is lightly browned then remove from oven.
6. Cool in the sheet pan on a cooling rack. When cool, slice into 1 inch squares. Coat squares with confectioners' sugar.
