This is an old recipe, dating back to WWII, that appeared in our newspaper recently. It came with the name Date Pies but that is not descriptive at all. To me, they're more like a meringue that has not been baked to dryness - they're riich and chewy. So I renamed them. Made with just 6 ingredients, these go together quickly and easily. Little work - great results!
Ingredients:
1 cup powdered sugar
1 cup walnuts, coarsely chopped
1 cup seeded dromedary dates, coarsely chopped
2 eggs, whites separated from yolks
2 tablespoons flour
1 teaspoon baking powder
lightly sweetened whipped cream (optional)
Directions:
1. Preheat oven to 375 degrees F. Spray a 12-cup muffin tin with non-stick cooking spray.
2. In a medium bowl, mix flour, baking powder and nuts together and add dates. Toss to coat dates.
3. In another bowl, beat whites of eggs until stiff peaks form.
4. In a third bowl, without bothering to wash beaters, beat yolks of eggs and add powdered sugar.
5. Combine all ingrediens and stir until well-blended. Fill muffin cups with batter. Bake in preheated oven for 15-20 minutes. Cool in pan and remove.
6. To serve: you may top each with a dollop of lightly sweetened whipped cream or eat plain. These are also good eaten slightly warm.
