Delicious white whole wheat flour, nuts, and currants give this dark-golden loaf a faintly sweet, nutty flavor, Try it toasted, spread with cream cheese and jam.
Ingredients:
2 cups white whole wheat flour
1 1/2 cups unbleached all-purpose flour
1/2 cup pecan meal
2 tablespoons lora brody bread dough enhancer(tm)
2 tablespoons baker’s special dry milk
2 tablespoons non-diastatic malt powder
1 1/2 teaspoons salt
2 1/2 teaspoons instant yeast
1 1/2 to 1 3/4 cups water
3 tablespoons whole flax seeds
1/2 cup chopped pecand or wheat germ pecans
1/2 cup currants
Directions:
1. Place all of the ingredients except the nuts and currants in the pan of your bread machine in the order recommended by the manufacturer.
2. Program the machine for whole wheat or whole grain bread (or equivalent, if available; if not program for basic or white bread) press start.
3. Check the dough with about 10 minutes remaining on the final kneading cycle; it should be smooth and just slightly sticky.
4. Adjust the consistency, if necessary, with additional flour or water.
5. About 5 minutes before the end of the final kneading cycle, add the nuts and currants.
6. Allow the machine to complete its cycle.
7. Yield: 1 loaf
