I love chocolate chip cookies. In an attempt to replace them with something healthier and mostly organic this is what I came up with. Ingredients:
1 3/4 c. organic whole wheat flour
3/4 tsp. baking soda
1/4 tsp. sea salt
1/4 c. natural dark brown molasses sugar
2/3 c. organic applesauce
1/4 c. organic olive oil
1/4 c. 100% pure maple syrup or organic honey (depending on your flavor preference)
1/2 tsp. vanilla
2 organic eggs
2/3 c. skim milk
3/4 c. dark chocolate chocolate chips
Directions:
1. Put first 10 ingredients into a large bowl.
2. Beat with mixer until well blended.
3. Stir in chocolate chips.
4. Pour into paper-lined muffins trays.
5. Bake at 350 F.
6. *13 minutes for regular sized muffins or 10 minutes for mini-muffins.
