Ingredients:
cake
2 cups boiling water
1 cup unsweetened cocoa powder
2 3/4 cups all-purpose flour
2 tsps baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup butter(softened)
2 1/4 cups white sugar
4 eggs
1 1/2 tsp vanilla extract
choc fudge
1/2 stick butter
8 squares unsweetened chocolate
1 can condensed milk
marshmallow icing
2 eggwhites
1 1/2 cups white sugar
1/3 cup cold water
1 1/2 tsp light corn syrup
1 tsp vanilla extract
1 cup marshmallow
Directions:
1. For the CAKE
2. 1. Preheat oven to 350 degrees F(175 degrees C).Grease 3-9 inch round cake pans.In medium bowl,pour boiling water over cocoa,and whisk until smooth.Let mixture cool.Sift together flour,baking soda,baking powder and salt, set aside.
3. 2.In a large bowl,cream butter and sugar together until light and fluffy.Beat in eggs 1 at a time,then stir in vanilla.Add the flour mixture alternately wth the cocoa.Spread batter evenly between the 3 prepared pans.
4. 3.Bake in preheated oven for 25-30 minutes or until toothpick inserted in center comes out clean.Let cool and prepare CHOC FUDGE and MARSHMALLOW ICING.
5. CHOC FUDGE
6. 1.Put all ingredients in a nonstick pan, stir over low fire. stir for 15 mins or til it is fudgelike do not over cook. set aside to cool.
7. MARSHMALLOW ICING
8. 1.Beat eggwhites,sugar,water and syrup on high speed till it stand on peaks.
9. 2.Heat in double broiler and add marshmallow and vanilla,continue beating wth a wooden spoon.when heated through,put mixture back in the mixer and mix well.
10. ASSEMBLE CAKE
11. 1.Spread choc fudge on top of 1st layer, then spread wth marshmallow icing.repeat procedure on the 2nd and 3rd layer.cover whole cake with the remaining marshmallow icing.drizzle choc syrup.
