The name means apple pancake, but you don't have to put apple in. You need a special skillet ($20 at Linens 'n Things) but they're worth the effort. They're great with lingonberries, or blueberries, or warmed raspberry jam, slightly diluted.
Ingredients:
2 cups all-purpose flour
2 t margarine or butter, melted
2 cups buttermilk
3 eggs, separated
2 t sugar
1 t. baking soda
1 t. baking powder
1/2 t. salt
Directions:
1. In medium bowl beat egg whites until stiff peaks form; set aside.
2. In large bowl beat egg yolks and sugar until well blended.
3. Add all remaining ingredients except egg whites.
4. Beat until smooth.
5. Fold in egg whites until well blended.
6. Heat aebleskiver pan over medium heat until drops of water sizzle.
7. Using about 1 tablespoon batter fill greased cups in aebleskiver pan about half full.
8. Cook until lightly browned on bottom (2 to 3 minutes); turn with fork or knitting needle.
9. Continue cooking until browned on bottom (2 to 3 minutes).
10. Balls are done when wooden pick inserted in center comes out clean.
11. Roll in sugar; serve hot. 35 pancake balls.
