Dandan Mian (Spicy Peanut Noodles)

Szechuan noodles. Dandan are wooden buckets, one on each end of a pole carried across the shoulders, from which vendors used to sell this snack in the streets of Chengdu.
Ingredients:
3 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
3 tablespoons vegetable oil
2 tablespoons smooth peanut butter
1/2 cup soy sauce
1/4 cup vinegar
1/8 cup honey
1/2 teaspoon chili
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
1/2 pound spaghetti
1 red bell pepper, julienned
1 yellow bell pepper, julienned
4 spring onions, sliced diagonally (white and green parts)
1 cup cucumber, seeded and shredded
Directions:
1. place garlic and ginger in food processor with steel blade
2. add all ingredients (except peppers and cucumber) and puree
3. cook spag.
4. add red and yellow pep., cucumbers and spring onions
5. add 3/4 sauce and mix.
6. serve warm or room temp.
7. remaining sauce may be used for more pasta
