Dad's Famous Banana Bread

By far one of the best banana breads I have ever had! Simple but well worth it! My dad will always make at least once a month. I've made a few changes from my dad's recipe by adding chocolate chips and some chopped nuts. This makes the banana bread even better, still great without those two items though. With any banana bread, make sure your bananas are over ripe or really bruised...this makes for the best bread. So the next time your bananas go bad, make some banana bread or freeze them for later. =)
Ingredients:
2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 cup shortening (i use regular vegetable oil) or 1/2 cup oil (i use regular vegetable oil)
2 eggs
4 bananas
1/2 cup chopped nuts (optional but recommended, i like to use walnuts) (optional)
1/2 cup chocolate chips (optional but recommended) (optional)
cooking spray or oil, to coat pan
Directions:
1. Preheat oven to 350 degrees.
2. Mix flour, sugar, and soda together.
3. Beat in Oil, eggs, and bananas.
4. Stir in chocolate chips and nuts.
5. Put in greased bread pan. Should be 3/4 of the way full.
6. Bake for 1 hour at 350 degrees. (the top of the bread will crack - but it is not done yet.
